Middle Eastern Zucchini Baked Omelet

This is basically the Middle Eastern version of frittata, only a little denser. It starts with zucchini and onions sauteed in olive oil. The vegetables are added together with lots of fresh mint and eggs, then baked in the oven for 15-20 mins or so. A super simple breakfast or brunch. Perfect for this weekend!
